Method

  1. Preheat the oven to 180 C (or 160 C fan-forced). Spray a donut pan with non-stick spray.
  2. Whisk the flour, sugar, baking powder, corn flour, salt and cinnamon together in a large bowl.
  3. Add the soy milk, melted butter, and vanilla extract and mix well to combine. The batter should be a similar consistency to cake batter.
  4. Spoon the filling into the donut pan, filling each one half-way, as they will rise a lot in the oven.
  5. Bake for 10-12 minutes, or until edges are lightly golden brown. Let cool for 5 minutes in the pan and carefully transfer to a wire rack to cool completely.
  6. Coat optionally with some cinnamon sugar mixed with melted butter, or try some Chocolate Donut Glaze (replace the milk with soy milk).

Notes

If you don’t have a donut pan, you can make this recipe into little muffins that taste just as good!
