Method
- Preheat the oven to 180 C (or 160 C fan-forced). Spray a donut pan with non-stick spray.
- Whisk the flour, sugar, baking powder, corn flour, salt and cinnamon together in a large bowl.
- Add the soy milk, melted butter, and vanilla extract and mix well to combine. The batter should be a similar consistency to cake batter.
- Spoon the filling into the donut pan, filling each one half-way, as they will rise a lot in the oven.
- Bake for 10-12 minutes, or until edges are lightly golden brown. Let cool for 5 minutes in the pan and carefully transfer to a wire rack to cool completely.
- Coat optionally with some cinnamon sugar mixed with melted butter, or try some Chocolate Donut Glaze (replace the milk with soy milk).
Notes
If you don’t have a donut pan, you can make this recipe into little muffins that taste just as good!
